Well according to the Amazon.com listing for Wind Waker HD on the Wii U there will be included a higher difficulty level that you can play in the game.

Now exactly what does that mean no one knows really since Nintendo has not said anything about it.  It could be a "Master Quest" mode similar to what Ocarina of Time had on the 3DS.  Till Nintendo says something it might be wise to take it with a grain of salt.  

Still this is interesting news and it might be another reason for fans of the game to pick it up again on the Wii U.

Wind Waker is due out in October for the Wii U.
